MMMmonday: A Yummy Spring Salad!

I was hunting around for a yummy and different salad and ran across the Tomato Asparagus Salad on AllRecipes.com.

It's light, flavorful and easy to make!   Me being me, I had to make an alteration so you will find my addition in red...

Ingredients:
3/4 pound fresh asparagus, trimmed and
cut into 1 1/2 inch pieces
3 plum tomatoes, halved and sliced
3/4 cup chopped red onion
1/2 cup balsamic vinaigrette
1/4 cup crumbled feta cheese
Directions:
1. Place asparagus in a steamer basket; place in a saucepan over 1 in. of water. Bring to a boil; cover and steam for 5-7 minutes or until crisp-tender. Drain and immediately place asparagus in ice water. Drain and pat dry.
2. In a large bowl, combine the asparagus, tomatoes and onion and cheese. Drizzle with vinaigrette and gently toss to coat. Serve with a slotted spoon. 


Notes: I used crumbled garlic and herb feta because that's what I had in the house... and it was yummy!

Mmmm. That does sound nice and fresh and easy. My husband can't eat tomatoes :( but I suppose he could pick around them.

you could always sub in something else for hubby's portion... beets, roasted peppers or even oranges might be good too...
this looks yummy! We all love asparagus around here and I'm getting tired of fixing it the same way every time. Stopping by from SITS!

Hi heather this sounds great and easy to make, lets see if I can make it, the kitchen and I don't get along very well.
Sounds tasty, especially with your feta addition. As the weather gets warmer I crave salads more and more.
