Winter Fruit
Salad (or anytime you like!)
Dressing:
½ cup sugar (Splenda works, too)
1/3 cup lemon juice
2 tsp. finely chopped onion
1 tsp. Dijon mustard
½ tsp salt
2/3 cup oil
1 Tbsp. Poppy Seeds
In blender or food processor bowl
with metal blade, combine sugar, lemon juice, onion, mustard and salt. Cover; process till blended. With machine running, add oil in a slow
steady stream. Add poppy seeds and
process a few seconds to mix.
Salad:
1 large head of romaine lettuce, torn
into pieces (or any other lettuce or combination of greens that you prefer)
4 oz. (1 cup) shredded Swiss cheese
(available already shredded in cheese department)
½ cup dried cranberries
1 apple, cubed (leave on some of skin
for color)
1 pear, cubed (Bosc with skin on is a
good choice)
1 cup cashew nuts (original recipe);
I used some toasted pecans/imagination is good!
In a large serving bowl, combine all
salad ingredients; toss to mix. Pour
dressing over and toss to coat; or serve on the side.
