I've had this recipe in one of my old recipe notebooks for years and with back to school under our belt, I pulled it out and made it the other day...
Homemade Alphabet Soup
5 1/2 cups chicken broth/stock
2 1/2 cups bite-size chunks chicken (you can use breasts, thighs or even store bought rotisserie chicken)
2 cups mixed vegetables (fresh or frozen) - I use carrots, celery and corn but you can add what you like
1 (14oz) can Italian-style diced tomatoes, undrained
1/2 cup water
2 bay leaves
1 cup dried alphabet pasta
3 green onions, thinly sliced
salt and pepper to taste
Bring the broth, chicken, vegetables, tomatoes, bay leaves and water to a boil in a large saucepan. Turn the heat to low, stir in pasta, and simmer covered until the pasta is tender. Remove from heat and discard the bay leaves. Stir in onions and salt and pepper to taste.
