I'm a brand new member of Collective Bias and I had a chance to participate in a fun and yummy trip to Walmart! I went in search of some brand new Gourmet Creations Sausages from Hillshire Farm, but as with any trip to Walmart, I couldn't just go for one thing... so I made a quick list on my iPad and headed out on my way home from Erik's 1 year check up!
Erik and I headed into Walmart and couldn't resist checking out the 50% sale of Halloween leftovers - although I didn't find any costume or decor stuff, I did get some extra treats to put away... but I digress - and you can see my whole shopping trip on if you want to check out the photos on Google+

I had heard that they might have a chicken with apple and gouda version from a friend who had shopped at Walmart this weekend and went looking for that one - yum! I had grand plans to make a spinach, chicken apple and gouda sausage and cheese hoagie for lunch... but it was not to be... when I got to my Walmart, the space where the chicken apple and gouda sausage should be was empty :(
So, I changed up my game plan and chose:
The new plan was Sweet Italian Sausage and peppers over basmati rice... so I went in search of the rice (which was out as well)
I was strolling along with Erik, trying to decide what to do with my yummy sausage when I was struck by inspiration -
and here's my recipe - makes 4-6 sandwiches
1 Package - Hillshire Farm Gourmet Creations Sausages - cooked and diced
1 Green pepper, diced1 Orange or Red pepper, diced
2 sun-dried tomatoes (or 1 plum tomato), diced
4 - 6 large eggs
dash of black pepper
dash of black pepper
4-6 Whole Wheat Rolls
1 cup shredded cheese
1. Dice your sausage, peppers and tomatoes
2. Heat your pan with a little bit of oil to medium
3. Saute the sausage, tomatoes and peppers for just a minute, until they just start to brown
4. Beat your egg with pepper to taste and add it to your pan. Cook until set.
5. Add your shredded cheese and cook until it starts to melt.
And voila!
