These cookies are good all winter long - and if you don't have enough broken candy canes, the perfect time to stock up on them is at the after Christmas sales!
Crushes Peppermint Snowballs
1 (18.25-ounce) package white cake mix
1/3 cup vegetable shortening
1/3 cup butter
1 large egg
1/2 cup crushed peppermint candy canes or red and white striped candies
1 1/2 cups confectioners' sugar
- Preheat oven to 375F
- Place the cake mix, shortening, butter, and egg in a large bowl. Beat with an electric mixer on medium speed 1 to 2 minutes until blended. Mix in the crushed peppermint with a wooden spoon.
- Shape the dough into 1 inch balls and place 2 inches apart on an ungreased cookie sheet
- Bake 9 to 12 minutes or until light brown around the edges. Cool one minute on sheets, then remove with spatula. Place the confectioners's sugar in a small bowl and roll warm cookies in the sugar to coat. Place cookies on wire racks to cool completely.
