Apple Chai Oatmeal Cookies
1 3/4 cup Quick oats
1 1/2 cup Flour
1 tsp. Baking powder
1/2 tsp. Salt
1 tsp. Cinnamon
1/2 tsp. Nutmeg
1 cup Packed brown sugar
1/2 cup White sugar
1/2 cup Butter, softened
1 Egg
1 cup Applesauce
1/4 cup Chai Latte Concentrate
1 cup Chocolate chips
1 cup Raisins
1 cup Walnuts
Directions:
- Pre-heat your oven to 350F (190C)
- Pour raisins into small bowl and cover with Oregon Chai Original concentrate, set aside.
- Combine oats, flour, baking powder, salt, cinnamon and nutmeg and set aside.
- In a separate mixing bowl, combine sugars, add butter and beat until creamy. Add egg and applesauce and blend until smooth.
- Add flour-oat mix and blend. Add chocolate chips, raisins and walnuts. Drop by rounded teaspoonfuls onto greased cookie sheet.
- Bake at 350, 10-12 minutes Yield 3 dozen
