This is an old fashioned cookie recipe that for me just sets the tone for the holidays - they're great with a big glass of milk!
Molasses Spice Drops
2/3 cup (180 ml) butter
2/3 cup (180 ml) sugar
2/3 cup (180 ml) molasses
2 eggs
3 cups (750 ml) all-purpose flour
1 tsp (5 ml) baking soda
1 tsp (5 ml) cinnamon
1 tsp (5 ml) ground ginger
1/4 tsp (1 ml) salt
1/4 cup (60 ml) cider vinegar
Mix the butter, sugar, molasses, and eggs thoroughly. Blend the dry ingredients together and add to the butter mixture, alternating with the vinegar. Mix well and drop by teaspoonfuls (5 ml) about 2 inches
(5 cm) apart on a greased baking sheet. Bake in a preheated 375F (190C) oven for 8 to 10 minutes, until no imprint is left when lightly touched. Makes about 5 dozen cookies.
