Pineapple Cookies
1 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
2 cups sifted flour
1 tsp baking powder
1/2 tsp salt (omit if using salted butter)
1 cup crushed pineapple
1/2 cup chopped peanuts (you can use other nuts like pecans or walnuts, but I don't because Hubby is allergic)
- Preheat oven to 350F
- Cream together butter and sugars. Add egg and beat thoroughly.
- Sift together dry ingredients
- Add to creamed mixture alternately with pineapple
- Stir in nuts
- Drop by teaspoonfuls onto a parchment lined cookie sheet, allowing 3-4 inches between each cookie
- Bake for 15-18 minutes
