I've posted this recipe on Acting Balanced before - one of the best things about these yummy cookies is that they're gluten free - so I can bake them for Liam, but they are still absolutely scrumptious and worth adding to your holiday cookie plate!
Chocolate Walnut Brownie Cookies (Yield: 12 large cookies)
3 c confectioners sugar
3/4 c cocoa powder
1/2 tsp kosher salt
1.5 c semi sweet choco chips roughly chopped
1.5 c walnuts or pecans roughly chopped (i've tried both - walnuts will save you some $$$)
4 large egg whites room temperature
Preheat your oven to 325F
Whisk together confectioners sugar, cocoa powder & kosher salt. stir in choco chips & nuts. Add egg whites and stir until just combined - do not over mix.
Drop 1/4c heaps onto a parchment lined baking sheet.
Bake in center oven 20-25 minutes at 325F, rotating 1/2 way thru.
Remove cookie sheet from oven and place on cooling rack - cool completely before removing cookies from parchment.
