MMMmonday - Leftover Turkey Lettucew Wraps with Cranberry Vinaigrette

One of the things I love most about the holidays is leftovers! And this is a fabulous way to make use of your leftover cranberry sauce and leftover turkey!

Turkey Salad Wraps with cranberry vinaigrette

2 tablespoons homemade or canned whole-berry cranberry sauce
1 tablespoon apple cider vinegar
1/ 4 teaspoon Dijon-style mustard
1 teaspoon extra-virgin olive oil
Kosher or sea salt

1 1/2 cups cooked turkey, cut into 1/2-inch cubes 

1 small Bosc pear, cored and diced
1/3 cup celery, diced
3/4 cup carrot, diced
1/4 cup feta, crumbled
Freshly ground black pepper
6-8 large lettuce leaves
  1. Whisk together the cranberry sauce, vinegar, mustard and oil in a small bowl. Taste and season with salt as needed.
    Combine the turkey, pear, celery, carrot and feta in a serving bowl. Drizzle with the dressing and toss to combine. Season with pepper to taste.
  2. Put approximately 1/2 cup of turkey salad onto each lettuce leaf and roll tight to make a yummy lunch or appetizer treat!

    this sounds so good!! not much a fan of turkey but i could go for a turkey wrap right now!
    Sounds yummy! We didn't have turkey this year, but ham...it might be good with ham too though!

    This sounds delicious. When I fix my turkey I will definitely give this a try with whatever is leftover.
