MMMmonday - Quick Feta Dip & Greek Roll Ups with Quick Feta Spread

This is one of those truly versatile and yummy recipes that work well in so many situations!  I got hooked on it this past holiday season and I think I"m going to be making it often!
I got it from one of my favorite sources - Chef Joe at wwrecipes.com


*If you would like to make a spread rather than a dip with this quick and easy recipe, just substitute cream cheese for the sour cream.

Quick Feta Dip



1 cup (250 ml) crumbled feta cheese
1 cup (250 ml) sour cream
1-2 cloves garlic mashed through a garlic press
2 Tbs (30 ml) chopped fresh parsley
1 tsp (5 ml) dried, or 1 Tbs (15 ml) chopped fresh herbs such as oregano, thyme, chives, or marjoram, or a combination of these
Salt and freshly ground pepper to taste

Combine all the ingredients in a bowl and mash with a fork until well combined. Serve with crackers, pita bread, or raw vegetables.
Serves 6 to 8 as an appetizer



I figure since it's a new year, I'd share a second recipe - using the Quick Feta Dip/Spread recipe above.


Greek Roll Ups with Quick Feta Spread (makes 6)


1 package flat-out bread - or other flatbread
1 recipe Quick Feta Spread (using cream cheese in place of the sour cream)
1/2 bag baby spinach, washed
1 1/2 cup leftover chicken, diced
1/4 cup pitted kalmata olives
1 large tomato, diced
1/2 cucumber, seeded and diced

  1. Spread the Quick Feta Spread onto each piece of flat out bread
  2. Add a handful of baby spinach, 1/4 cup of chicken, a sprinkle of kalmata olives, about a tablespoon of tomato and about a tablespoon of cucumber 
  3. Roll up and enjoy!

Mmm, sounds delicious. I'm having a couple get togethers soon and the wraps would be perfect for both.
Sounds yummy. I probably won't ever be able to make it though. My husband is so picky!

Yumm-oh! Love dips!
You can also replace the sour cream with plain yogurt.

Feta is pretty unique tasting... because it's brined it has a salty quality that I absolutely love. It's a fun mix of crumbly and smooth that doesn't melt - it holds its shape when heated. It's probably my absolutely favorite cheese for salads, pizza topping and more!
Sounds interesting---might give this recipe to a friend who loves feta cheese.
