MMMmonday - Wine Jelly

A few weeks ago I got to head to a Moms' night out and met a new member of our club who shares so many parallels with me - her son has Asperger's syndrome and is on a GFCF diet and she also has a little one... so we had lots to talk about - luckily we didn't spend the whole night talking about kids... we also spent time talking about Wine and the thread soon moved to Wine Jelly - such a yummy way to use up a bottle of wine that didn't quite meet your tastes or that you need to open 'just because' and have to finish up!


I told her I'd post my recipe so that it would be easy to find... and here it is:


Wine Jelly



3 cups wine (one 750 ml bottle - can be red or white, dry or sweet)
1/2 cup fresh lemon juice
1 (2 ounce) package dry pectin
4 cups white sugar


Directions


  1. Combine wine, lemon juice, and pectin in a large saucepot. Bring to a boil, stirring frequently. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam off top, if necessary.
  2. Ladle hot jelly into hot, sterilized jars, leaving 1/2 inch headspace. Tighten 2 piece lids. Process for 5 minutes in boiling water bath.
I have a friend who buys wine glasses on clearance and fills them with wine jelly - sealing them with paraffin wax instead of using typical jam jars - either way, this makes a fabulous hostess gift, luxurious snack or even a great way to make your appetizers extra yummy!
