Apparently I have committed myself to making the red velvet cake I posted for MMMmondays and thanks to my parents, Wayne and I will be heading out for a romantic night out on Wednesday night.

I used to keep them on the counter until Erik got tall enough to reach them... now I'm hunting for a new safe place - he gets into my purse so that's not an option either...

My favorite teacher was Mr. Riggs - he taught 4th grade and he was also the choir master and drama club coordinator. The year I was in 6th grade we actually performed a play that he had co-written with another teacher, called The Lucky Penny. Mr. Riggs wasn't the easiest teacher I ever had, but he worked hard at making lessons fun and he was great at classroom management and making us all feel special...
