Simple Salad Dressings

One of the easiest things to make from scratch, imho, is salad dressing, especially oil and vinegar based dressings - just put the ingredients into a bowl and whisk!  I found a great recipe on Naptime is My Time and I thought I'd share a couple of my favorites with you!


Light Vinaigrette

1/4 cup (60 ml) water
2 Tbs (30 ml) red wine vinegar
2 Tbs (30 ml) extra-virgin olive oil
1 Tbs (15 ml) Dijon mustard
Salt and freshly ground pepper to taste

Whisk all ingredients together or blend in an electric blender or food processor until smooth. Makes about 1/2 cup (125 ml).



Creamy Pineapple Salad Dressing

1 cup pineapple chunks
1/4 to 1/3 cup canola oil (depending on desired consistency)
2 tablespoons freshly squeezed lime juice
2 tablespoons freshly squeezed orange juice
1/2 teaspoon non dairy coffee creamer
1/4 teaspoon onion powder
1/4 teaspoon cumin

Thoroughly combine all of the ingredients in an electric blender, processing the dressing until it is smooth.  Transfer the dressing
to a serving bowl and serve immediately, or cover and refrigerate it until serving time. Makes about 1 1/2 cups.



Raspberry Vinaigrette 
 1/2 cup vegetable oil 
1/2 cup raspberry wine vinegar 
1/2 cup white sugar 
2 teaspoons Dijon mustard 
1/4 teaspoon dried oregano
1/4 teaspoon ground black pepper 


In a jar with a tight fitting lid, combine the oil, vinegar, sugar, mustard, oregano, and pepper. Shake well.

I have never tried to make dressings. I think I would like a pineapple dressing yum!!
