Last week our Publix had a fab deal on fresh pineapple, so I went searching for yummy ways to use it and found this - which is a great way to add something sweet as a side or even as a dessert course!
Pineapple Rice
3 cups (750 ml) cooked white rice
3 cups (750 ml) coarsely chopped fresh or canned pineapple, drained
6 Tbs (90 ml) butter
3/4 cup (180 ml) brown sugar
3/4 cup (180 ml) pineapple juice or water
Place one third of the rice in a greased baking dish. Top with one third of the pineapple, butter, and brown sugar. Repeat twice. Add the pineapple juice and bake covered in a preheated 350F (180C) oven for 30 minutes. Serves 4 to 6.
